mango taste not overwhelming compare to the 1st attempt (using Aus mangoes)

But wrong judgement - pouring the topping before the cheese filling set properly

I cooked my own red dates bean paste,
using red dates + store bought bean paste
adding only 2 spoonful of brown sugar and some maltose
the paste taste nice, but seems like not adding enuf maltose
the paste texture is a bit lumpy

is this rat or rabbit???
frankly speaking I also not sure as well

昨天(星期日)在姊姊家有聚餐, 所以在星期六下午4點多就開始做蛋糕打算帶過去

到晚上總共做出了4款蛋糕 - 2個幕斯蛋糕, 1個蜂巢蛋糕和迷你沙哈蛋糕

水蜜桃幕斯蛋糕 Peach Mousse Cake

在處理慕斯的時候發現居然忘記買水蜜桃果汁
所以這個幕斯蛋糕只有水蜜桃果肉卻沒有水蜜桃的香味 ~>___<~
巧克力幕斯蛋糕 Chocolate Mousse Cake

這款幕斯蛋糕我並沒有用黃老師的配方
不知道為甚麼我對於需要加蛋黃的慕斯總有一些些的抗拒
我會一直擔心殺菌沒處理好的問題
所以我所做的幕斯都是沒加蛋黃的那種
第一次做巧克力幕斯, 發現幕斯定型得超快的
還沒完全入模就已經開始硬了 @___@ (需要繼續嘗試改進)
蛋糕上面採用了黃老師的chocolate ganache 配方
用的是Carrefour 的 dessert chocolate,
超愛這個法國巧克力的濃郁微苦口感


蜂巢蛋糕 Honeycomb Cake

這個蛋糕不能算完全成功
因為上面的部分和下面部分的蜂巢組織還不統一
可能是因為沒有煮糖漿, 所以還沒完全成功
我用了golden syrup + browning + 水來處理糖漿部分.

這個蛋糕做了3次, 我個人都不太滿
蛋糕體還是有點硬, 應該還可以做到比較鬆軟
這次因為太趕了所以沒有做上面的chocolate ganache

Bought about a kilo of Pakistan Mango from Supermarket
So last weekend I tried to bake Mango Mousse Cake
The cake sponge is using Mango Nectar & a few drops of Mango essence
Mousse part using Mango Nectar & fresh Pakistan Mango cube
The cake has a nice Mango Fragrance ^_^
But I still found it a bit too sweet +__+

1st attempt on Blueberry Mousse Cake,

too lazy to bring out the mousse ring

I had used a 6" x 6" x 3" baking tin as my mould

and the end result is my mousse layer just way too thick

the mousse taste so~so~ but the vanilla sponge taste nice tho~

試做了黃老師的經典咖啡蛋糕, 在上課時沒有試吃這個蛋糕
只記得當時很趕, 包裝好後全部捐出去了
害我現在不知道口感到底對不對 = ______ =
美靚說她很喜歡這個蛋糕...可是....
我已經減糖了...為什麼還是覺得甜膩 ~>___<~
有哪個同學可以告訴我對這個蛋糕的感想啊?

不知道要到哪裡去買鏡面果膠(只買到杏桃果膠),
可是咖啡和杏桃完全不搭吧, 所以上面那層黑咖啡只加了點吉力T粉

注: 刀子不夠鋒利,切面不整齊

This time the texture is more towards the light cheesecake that

I had taste in Singapore when it was 1st introduced by a

Japanese Supermarket very long time ago.

The creamy taste is what i like the most.

Will keep on trying until i can get the same texture as aunty meilih

baked on the final products presentation day ^____^

可是不確定這個蛋糕跟戚風蛋糕的差別在哪
終於在網路上看到RECIPE也知道了它的長相^^

雖然我第一次做的結果是失敗的
原因在於蛋白打發得不好, 造成有很多氣孔
口感很綿Q, 有濃郁的蛋香
會再繼續嘗試 ^___^v

做了沒裝飾, 沒蛋糕邊的手拉胚蛋糕,
沒拉胚就不能叫手拉胚蛋糕阿...
所以就以所用的材料和口感取了個名字...叫APPLE MOUSSE CAKE
蛋糕體用的是之前的VANILLA SPONGE CAKE

FILLING PART嘛.....失敗了

原因之1:
不確定是不是動物性鮮奶油不可以冷凍
解凍後味道有很濃的奶味(用ANCHOR牌子)
而且打發的感覺和顏色完全和上課時不一樣

原因之2:
RUM 忘記放了...到最後才加入...味道不能融入 ~>_<~

原因之3:
買到的蘋果汁.......味道好濃

改天再用植物性鮮奶油試做看看, 蛋糕體的糖分也需要減少
不喜歡只有砂糖的味道 = =

結論
哥哥說: 吃來有怪怪的味道

我個人認為: 整體吃起來, 蛋糕體感覺不到,
吃的時候有很濃郁的蘋果+RUM的味道
吞下去後口裡又多了一股奶味
還真的只有怪怪的可以形容

昨天晚上做了香草蛋糕....戚風式的
不確定是不是搞錯了蛋的重量
整個蛋糕感覺像棉花....
摸起來, 吃起來都沒啥感覺
輕輕的, 甜甜的...就只有砂糖的味道
也許我該叫它棉花蛋糕
可是哥哥卻說這個蛋糕做的不錯

這裡唯一的一家原料行根本沒這個東西, 而我也搞不清楚這個麥精糖漿是啥

I am looking for a cheesecake recipe, which has a custard pudding type of texture

I tot this souffle cheesecake is what I am looking for but unfortunately i was wrong
This Cheesecake is very creamy but according to another few recipe I found on net,
Souffle cheesecake supposed to use corn flour only and this recipe contained both
cake flour and corn flour. And I taste slight flour texture, will it be too much flour?

Trying to clear the egg whites in my freezer, I search for angel cake recipe from internet
This is a pure egg white recipe and I did make slight amendment by adding
a bit of oil and reduce of sugar usage. I actually tot it will fail but here it it ......

Opinion: can add more oil cos the texture is a bit heavy and dry compare to Chiffon cake

剛烤了一個蜂蜜橘子茶醬蛋糕
用了一個在網路上看到的簡易蜂蜜蛋糕配方
可是我做出來的成果------> 是失敗的 ~>____<~
問題在於我的蛋糊打的不夠發
蛋糕體變得好粗糙 ~>_____<~
自做聰明的把蜂蜜換成茶醬的結果是
烤培後的蛋糕居然是脆脆的....暈倒~~~

第一次试做。。。迷你沙哈杯子蛋糕，

成本很高 = = 难怪我们这没看到有人在卖

分2次烤，第一次的忘了把MIXED FRUITS搅进去

结果MIXED FRUITS都在上面

第2盘测试把APRICOT JAM放在里面，

结果全溢出来了。。。晕 =______=

制作当天的结论：口感还不错，可是还是喜欢还没加

ganache的口感，温温的好好吃 ^_____^ v

第2天试吃结论：不太喜欢杏仁的颗粒，由于网筛太密，

杏仁粉根本无法过筛, 在冷藏后吃起来后特别明显（粗粗的），

制作的时候有剩余的蛋白，改天可以试试看把剩下的蛋白全放下去

第3天试吃结论：蛋糕体感觉干干的, 都是杏仁颗粒= =

Get a packet of Waitrose mixed fruit days ago from supermarket,
quite surprise to see so many whole cherries in a 500g pack ^_^
at least 8-10 pcs whole cherry and i halves all of it

My end products..... look a bit ugly tho~

Very 1st Baked Mooncake

Tried the baked version of mooncake today....
feeling tiring and depressed ~>_<~
I dunno what's wrong with my lotus paste,
the pandan one just not form to sticky paste,
look more like pau filling ~>_<~
the green tea and black sesame one taste more like
"tau-sah" (red bean paste) than lotus paste

is it really need those lotus seed with skin in order to have good lotus paste????

Anyway I took some pic on the output....
coming 1st will be my freehand red bean paste piggy
I am using the Red-man Mooncake red bean paste, it's really sweet = =

Followed by black sesame mooncake,
the black sesame filling expand during baking
and the output look more like "tau-sah piah"
(bean paste cookie) than mooncake

Followed by Green Tea red bean mooncake

Finally my one and only iron mooncake mould that
i bought in Taiwan more than 10 yrs ago

Fresh from Oven ~~ Cream Cheese Mixed fruits Pound Cake

This round is testing on the quality of Malaysia dried mixed fruits.
Bought a box of mixed fruits from my last Miri trip in July, kind of
surprise to find whole red and green glaze cherry in the box. But my
favourites still Sunbeam mixed fruits from Australia.
Next round might need to try on mixed fruit w/o soaking in Rum
as my sis always said my cake making her drunk = = !!! .

After failing few times on mixed fruits cake (referring to Big Sister type of Fruit Cake),
This time I use Aunty Yochana's recipe and it turn out to a pound cake instead = . =

My oven giving me a bit of burning top but after all the result
is satisfactory, kind of soft & fluffy and the fruits are juicy ^_^

The mixed fruits sweet as usual and luckily i only use half of the sugar.
I don't get the cheesy taste, may be~ just may be (cos never tried a
cheese fruit cake from bakery shop) i just get used to heavy cheese cake.
Btw I add a bit of cranberry in it.

Thinking of getting a Kitchen Aid mixer recently........
My Philips mixer not powerful enuf and kenwood one
is just too deep bowl for small volume batter.

Chocolate Brownies with marshmallow

Just having my 1st attempt on brownies,
get the recipe from internet webpage,
but the outcome was not satisfied.

I think it due to few reasons:

1. I didn't get ready the baking tin in advance,
after I done with the tin the choc batter harden = =

2. I never expect marshmallow melted in oven as I am
not a fan of marshmallow and the after effects was
big holes in/on my brownies

3. The brownies is a bit dry and even though I reduced half
of the sugar the brownies still taste too sweet for me.

Will find sometime to try the aunty yochana's recipe

1st attempt of Snow Skin Mooncake

This is my 1st attempt on mooncake.....

I had made an ice-cream soda rainbow snow skin mooncake

with mocha lotus paste.

Not an easy job though cos i don't expect the snow skin dough to be

so lumpy. I can't make a proper swiss roll model of the dough,
so it doesn't look exactly like the y3k book that i bought.

The end result of snow skin is not exactly what i am looking for,

it's not chewy ("Q") at all ~>_<~

Mocha Cheesecake

2nd batch of yesterday baking is Aunty Yochana's Mocha Marble Cheesecake...
the cake taste creamy & rich..... but i think i fill the baking tin too high
and i fail to make proper marble swirl....it look totally white out inside ~>_<~

I had use 2 pcs of 6" round baking tin....after over-filled the 1st one
I am running out of cheese filling for the 2nd one....
so i re-do 1 more batch of cheese filling and decide to make a zebra cheesecake

As I didn't warm up my knife so the cutting edge doesn't look sharp at all ~>_<~

After seeing watermelon lapis on aunty yochana's blog,
I do have the urge to bake a watermelon lapis.
I don't have watermelon powder so i use raspberry essence,
I don't have black sesame and I replaced it with chocolate rice
I am not a daily baker and I don't know what should i do to the balance egg white....
so i decide not to follow her recipe.
I am using a recipe from lapis sarawak book 1 with a slight modification
cos the original recipe is just too sweet for me.

My own opinion....if the top 4 layer all in red....it will look more like watermelon slices o (^o^) o
