Fresh from Oven ~~ Cream Cheese Mixed fruits Pound Cake
This round is testing on the quality of Malaysia dried mixed fruits.
Bought a box of mixed fruits from my last Miri trip in July, kind of
surprise to find whole red and green glaze cherry in the box. But my
favourites still Sunbeam mixed fruits from Australia.
Next round might need to try on mixed fruit w/o soaking in Rum
as my sis always said my cake making her drunk = = !!! .
After failing few times on mixed fruits cake (referring to Big Sister type of Fruit Cake),
This time I use Aunty Yochana's recipe and it turn out to a pound cake instead = . =
My oven giving me a bit of burning top but after all the result
is satisfactory, kind of soft & fluffy and the fruits are juicy ^_^
The mixed fruits sweet as usual and luckily i only use half of the sugar.
I don't get the cheesy taste, may be~ just may be (cos never tried a
cheese fruit cake from bakery shop) i just get used to heavy cheese cake.
Btw I add a bit of cranberry in it.
Thinking of getting a Kitchen Aid mixer recently........
My Philips mixer not powerful enuf and kenwood one
is just too deep bowl for small volume batter.
